Heat oiI in a large skillet. Add onions and sauté 1 minute. Add green pepper and sauté 3 minutes. Add mushrooms and cook for additional 2 minutes, or until tender.
Add stewed tomatoes, tomato paste, garlic, basil, oregano, bay leaf, sugar and hot pepper sauce. Simmer for 30 minutes, stirring occasionally.
Remove the bay leaf prior to spreading sauce on the pizza.
